The New York Times has a good article on Quebec's favorite dish, poutine. Pou (as we called it in University) is a concoction of french fries, cheese curds, and gravy--it's a heart attack on a plate. Says Martin Picard, owner of the Montreal restaurant Au Pied de Cochon:
"People were ashamed to say, 'I want to go to a restaurant to eat poutine... you'd eat it at 3 in the morning when you are drunk or after a party. I didn't like the hypocrisy."
I've never been a fan of pou, but it deserves a mention because though it's certainly the most-consumed dish by drunk Quebec University students everywhere, it's now being reinvented for gourmands living far from la belle province.
